Easy food to cook

While doing my lesson plan I got to thinking how much fun it would be if I could make one or two of these dishes with my students. My school has a cooking room that is no longer in use and I think I might bring my classes up there to make an Asian dish. Does anyone have any fun and easy ideas of what I should cook.
